HOW ALLERGENIC FOOD IS TREATED IN SAN SISTO FACTORY


INDEX: Those who are allergic show symptoms eating food, which is part of the diet for the major part of
population. Few doses of allergenic ingredient can cause serious and even fatal reactions as well in allergic
people. More than 170 foods have been documented as cause of allergies, but more than 90% of cases of
allergic reactions are due to a small group of 8:


MILK, FISH, SHELLFISH, PEANUTS, SOY, OTHER NUTS, CEREALS CONTAINING GLUTEN.


Other allergenic substances are: sulphur dioxide and sulphites, lupins, shellfish, sesame, mustard, celery.

About 20% of population changes the diet because they feel a bad reaction but only few people have a real
allergy to food. The only way to manage their allergy is not eating above-mentioned food.
SYMPTOMS: the most common symptoms of allergy to food affect gastrointestinal tract (vomit, diarrhea,
nausea), skin (nettle rash, allergic rash), breathing apparatus (asthma, rhinitis). Often allergic reaction is
very quick, straight away or during ingestion. It may be slight or fatal (anaphylactic shock). Every person
reacts in a different way to different level of the allergen present in the food, furthermore the reaction
varies also according to everyone’s health conditions. Traces of the protein of allergenic food may cause
allergic reaction as well.


ALLERGENIC FOOD IN OUR PRODUCTS
Allergenic food used in San Sisto factory is:
Milk, Eggs, Other nuts such as hazelnuts and almonds, Cereals containing gluten (ex. flour).
We also use ingredients which are from the allergenic vegetable ingredient (soy, peanut), but they don’t
contain the protein (cause of allergic reaction) which is removed during technological process:
Peanut oil, Soy lecithin.


FACTORY’S PROCEDURES FOR ALLERGENS TREATMENT
- HACCP researches and controls are conducted over all production lines every year and whenever
we launch new products. HACCP procedure aims to protect consumer’s health. Allergenic
substances have great importance in this studies.
- Food producer is responsible for conveniently informing consumers. Allergenic food is written in the
list of ingredients or in the form of “Warning” at the end of this list, in case of accidental blend (“It
may contain traces of…”).


WARNINGS FOR VISITORS
During visit to Perugina House of Chocolate and during classes in the Perugina School of Chocolate you will
find out food containing allergenic ingredients. As well as read the lists of ingredients in food packages or
boxes containing loose product, it is important to inform Nestlè Staff in case of allergies and/or
intolerances which You suffer
